Breakfast Casserole with Hash Browns Recipe

This is a special recipe for me because the first time I ever made it was for our second baby’s gender reveal party! I wanted everything to be perfect and had an idea in my mind of what I wanted to make, but I couldn’t find exactly what I was looking for online. I ended up using a combination of two recipes from websites I love, Cafe Delites and Delish. Our whole family loved this casserole and I have continued to make this version that I created whenever we host a brunch at our house.

I love this recipe because you can really make it your own with whatever fillings you like (sometimes I stick to a veggie version or just cheese, or I will substitute ham for the bacon). The hash browns on the bottom add a nice crunch and make it a more filling meal. A lot of breakfast bakes have a bread base, so I like that this is a little bit lighter, since I always serve it with fruit and something sweet like homemade muffins. I hope you enjoy it!

Breakfast Casserole with Hash Browns Recipe

Makes 8 servings

Ingredients

  • 1 pound bacon, chopped
  • 10 large eggs
  • 3/4 cup 2% milk 
  • 1 teaspoon garlic powder
  • Salt to season
  • Fresh cracked black pepper
  • 1 cup shredded white Cheddar
  • 28 oz shredded hash browns, frozen
  • 1/2 cup shredded mozzarella cheese
  • Fresh chives
  • Instructions

  • Preheat oven to 375
  • Lightly grease an 8x12-inch baking dish with nonstick oil spray (I love my Staub casserole dish)
  • Add bacon to pan and cook until crispy
  • Remove bacon but reserve 2 tablespoons of bacon fat in pan
  • Blot excess grease from bacon, chop into small pieces
  • Sautee hash browns in bacon fat until defrosted and golden
  • In a large bowl, whisk together eggs, milk and garlic powder
  • Season generously with salt and pepper
  • Mix in the bacon and cheddar cheese
  • Add a layer of hash browns to the base of the dish
  • Pour egg mixture over the hash browns
  • Top with the mozzarella
  • Bake until eggs are cooked through and edges start to turn golden brown (about 35-40 minutes)
