This is my favorite weekday breakfast to have when I’m feeling extra hungry. When I don’t get enough sleep thanks to one of my lovely little angels, this will be my breakfast. My two-year-old absolutely loves this recipe, hmm… maybe she is waking me up in the middle of the night so I will make her oatmeal in the morning? I may need to change up this routine ;)
This recipe is based on a recipe from one of my favorite websites mentioned often on this blog, Eating Bird Food. I learned from this blog about “voluminous eating” which was a game changer for me! I used to think I didn’t like oatmeal, because I would eat it and then be starving an hour later. I have learned this was because 1) I wasn’t adding protein to it, and 2) I wasn’t adding enough liquid. The concept of voluminous eating is to make your food take up more space in your stomach so you feel fuller. In this recipe, this is done with extra water and/or almond milk and chia seeds. I add extra chia seeds to the original recipe to add extra protein. I feel so full when I finish this meal without adding many extra calories. It’s so good and such a great comfort meal!
